"My Secret" Summer Pasta Salad

I've made this "secret" recipe time after time over the past 15 years plus and it never fails. It's so simple to make and you can even whip up the night before if you are short on time. It's great for picnics - family gatherings - or a hot summer day.

One drawback - no leftovers to enjoy ;)

FRESH PESTO TORTELLINI SALAD (COLD)

2 pkgs. fresh cheese tortellini
1 pkg. fresh pesto sauce
1/2 c. white wine tarragon vinegar
1 lb. asparagus (sliced and blanched) (you can substitute long stemmed canned)
2 c. julienned red and yellow peppers
1 c. walnut pieces (I usually skip the walnuts)

Cook tortellini, rinse in cold water. Drain well. Combine pesto, vinegar; whisk to blend. Add other ingredients. Mix well. Chill to taste. Serves 4 to 6.

Of course you can easily double this recipe.
