Duck Eggs At The Farmers Market

Now that my sister is has relocated from Portland, Oregon to Santa Rosa, California, I had to take her over to my favorite weekly Farmers Market. It operates every Wednesday - year round - rain or shine (how great is that). While we were there, I happened upon a farmer selling duck eggs, after asking a few questions, I decided to buy 6 and give them a try. When I got home I did a bit of quick research on the Internet and found that I could just cook them up like chicken eggs or add them to any baking recipe. In fact, I found that some pastry chefs prefer duck eggs because the whites of duck eggs have more protein than those of chicken eggs and they whip up higher when beaten. This creates more loft in cakes so you get a lighter, higher cake. The yolks are also richer so cakes may also be richer. Very interesting. When my kids got home from school I showed them the larger than usual eggs and cooked them up without telling them they were duck eggs. When we tasted them we all got a pleasant surprise. They were absolutely delicious!! I then revealed that we were actually eating! The funny thing is they tasted almost exactly like chicken eggs - just richer in texture and flavor - and because I bought them from the farmer directly they were sooooo fresh. If you've never had a fresh egg - you don't know what your missing. I cooked up the last one for my husband this morning so they are all gone now, but I am going to buy more next week and bake a cake!!

Hi Cindy - I love that we've become friends via blogs!! I've so neglected my blogging friends lately. It's been hard to get back into the blogging groove with my sister and nieces so close by now.

I will probably make a simple white layer cake but try something a little more interesting for my husbands upcoming birthday in Oct. He is a chocoholic!!!

Fresh eggs are absolutely phenomenal. They are hard to come by though which is why I don't have them that often. I recently just figured out how to tell if an egg is rotten.

I was shocked to see in "julie & Julia" that Julie had never eaten an egg til she began her blog with cooking a recipe each day. I adore eggs, so pure and tasty.

thank you for your very nice comment today on my blog... I thought I would return the favor and then swooned over your gorgeous photos today...I am not a great fan of eggs, or rather my body is not, and I don't care for any other than chicken eggs, if I do eat them...having eaten just about every kind, the worst being turkey, I think! My DH wandered in one day with a bunch of wild turkey eggs that were horrific! and fertile, if you know what I mean...how wretched!! I don't think I will ever eat another egg and now, maybe you won't either! I do apologize!! *grins*

looking forward to the cake and hoping for a recipe or three!

Sounds great! I've never had a duck egg but you've convinced me that I should try it if I have the chance.

I think it's funny that you showed your kids the larger than usual eggs and didn't reveal what they actually were at first... I wonder if they thought it was just laid by a giant chicken?

You make everything look and sound delicious. Even duck eggs. There is something unnatural about eating something that large. I feel the same way about ostrich eggs. Just scared of the unknown.

Sabina, Your pictures are stunning. the colors, the lighting just perfect!! there is a little farmhouse I pass by each time I am in Vermont that your post reminds me of. they always have a basket of fresh duck eggs outside, it is so charming.
